Slow Cooker Pasta e Fagioli Soup Recipe

This comforting Pasta e Fagioli is an Olive Garden favorite that you can easily make at home in a crock pot. Rich, savory, and full of Italian flavor, this slow-cooked soup is a simple weeknight solution and a perfect way to warm up on chilly days.

Ingredients

  • 1 lb sausage
  • 2 14½ oz cans Italian-style diced tomatoes
  • 2 15 oz cans cannellini beans drained and rinsed
  • 2 cloves garlic diced
  • ½ c fresh basil chopped
  • 2 tbsps Italian seasoning
  • tbsps salt
  • 1 tbsp pepper
  • 2 32 oz containers chicken or vegetable broth
  • 16 oz package ditalini pasta cooked
  • Mozzarella, thinly sliced optional

Instructions

  • Brown the sausage in a skillet, then drain off any excess fat.
  • Add the cooked sausage and all remaining ingredients except the pasta to a 5-quart (or larger) crock pot and stir to combine.
  • Cover and cook on low for 6 hours to allow flavors to meld.
  • Cook the ditalini pasta separately according to package instructions, then place a portion of pasta into each serving bowl and ladle the hot soup over the pasta.
  • If desired, top each serving with thin slices of mozzarella. For a dairy-free version, omit the cheese.
