Crock Pot Pasta e Fagioli Soup

Ingredients
- 1 lb sausage
- 2 14½ oz cans Italian-style diced tomatoes
- 2 15 oz cans cannellini beans drained and rinsed
- 2 cloves garlic diced
- ½ c fresh basil chopped
- 2 tbsps Italian seasoning
- 1½ tbsps salt
- 1 tbsp pepper
- 2 32 oz containers chicken or vegetable broth
- 16 oz package ditalini pasta cooked
- Mozzarella, thinly sliced optional
Instructions

Brown the sausage in a skillet, then drain off any excess fat.

Add the cooked sausage and all remaining ingredients except the pasta to a 5-quart (or larger) crock pot and stir to combine.

Cover and cook on low for 6 hours to allow flavors to meld.

Cook the ditalini pasta separately according to package instructions, then place a portion of pasta into each serving bowl and ladle the hot soup over the pasta.

If desired, top each serving with thin slices of mozzarella. For a dairy-free version, omit the cheese.
