Description

These easy potato breakfast cookies combine mashed potatoes, oats, dried fruit, and seeds to create a wholesome, portable breakfast or snack that tastes like a treat.


Ingredients

  • 1 cup prepared mashed potatoes (plain, unsalted)
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • ½ cup unsweetened applesauce
  • 1 tablespoon ground flax + 2 tablespoons water (flax egg)*
  • ¼ cup sunflower seed butter**
  • 1½ cups old-fashioned oats (certified gluten-free if needed)
  • 2 teaspoons cinnamon
  • ½ cup dried cranberries
  • ¼ cup sunflower seed kernels

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with a silicone mat, parchment, or foil.
  2. In a large bowl, whisk together the mashed potatoes, maple syrup, vanilla, applesauce, flax egg, and sunflower seed butter until smooth.
  3. Add the oats, cinnamon, dried cranberries, and sunflower seeds. Stir until evenly combined.
  4. Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly with your hand.
  5. Bake 10–12 minutes, then let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
