<p>Exactly! These little treats contain not a single gram of flour, which makes them perfect for anyone who is gluten-intolerant or has celiac disease.<br />But there&#8217;s even more to love&#8230;</p>
<p>They are not only vegan (I also tested a version with eggs and include that option below) and gluten-free, they also include a &#8220;secret&#8221; ingredient: <strong>black beans</strong>!<br />Whenever I mention them, people react with a surprised &#8216;😱&#8217; and ask, <em>&#8220;How can a dessert be so good if it&#8217;s made with a legume?!&#8221;</em><br />The secret is simple: the black beans give the batter the <strong>perfect moist and almost creamy texture</strong>. As for taste, one word sums it up: RICH. These brownies are deeply chocolatey and you won&#8217;t taste the beans. They are not overly sweet because the batter uses a generous amount of unsweetened cocoa. If you prefer something sweeter, top the brownies with good dark chocolate (75% cocoa or less) or fold chunks of dark chocolate into the batter as a final step.</p>

Everything is handmade and produced fresh each day: fruit tarts with glossy fillings, delicate mousses, éclairs in multiple flavors, classic cream puffs, and small chocolate cakes. The presentation is refined and inviting, making it hard to leave without trying more than one item.</p>

<p>Chef Janvier kindly provided a behind-the-scenes look at the kitchen on the morning of my visit. Watching him and his team work was a lesson in precision: from piping and glazing to careful finishing touches. One detail he shared was the use of heavy-duty sheet pans imported from France for certain pastries, a small but meaningful choice that influences texture and bake quality.</p>

<p>All chocolate products are made on site in a dedicated chocolate room at the back of the kitchen. The volume produced there is impressive, and the selection rotates to highlight seasonal flavors as well as house staples. The pralines and bonbons are crafted from premium chocolate and fresh ingredients, and because inventory turns quickly, each piece is consistently fresh.</p>

<p>The shop also offers chocolate bars, sauces, fresh nougat, and madeleines that pair well with espresso. These smaller confections make for convenient gifts or delightful snacks to enjoy while exploring downtown Los Gatos.</p>

<p>A signature ingredient at the shop is Salango chocolate, a custom blend developed by Chef Janvier in collaboration with a chocolate manufacturer. This house chocolate—used in ganaches and confections—is known for its smooth, deep flavor and bright cocoa character. The dark blend, at just over 70% cacao, lends a rich, brownie-like intensity to desserts that feature it.</p>

<p>One standout item is the cannelé, a traditional French pastry made in small batches. When served warm, the cannelé has a deeply caramelized, slightly crackled exterior and a soft, vanilla-scented custard center. Initially the dark exterior can surprise first-time customers, but those who try it often become fans. Because cannelés are baked in limited quantities, they’re usually sold at peak freshness.</p>

<p>Fleur de Cocoa is open Tuesday through Sunday for breakfast and lunch and accepts orders for specialty desserts, cakes, and custom chocolates in addition to its daily offerings. While it may be slightly off the usual tourist path for visitors to the Bay Area, the quality and care in the products make it well worth a visit. Locals know it as a reliable source for exceptional French pastries and handcrafted chocolate.</p>
