Apple Hand Pies

If you’re shifting into fall baking, these apple hand pies are a perfect choice. They capture the cozy flavors of a classic apple pie but in a portable, individual form. They bake quickly, are easy to serve, and make a great addition to fall gatherings or Thanksgiving dessert spreads.

Hand pies can be made in various shapes, though circles, squares, and rectangles are the most common. I kept these simple and classic for a reliable, crowd-pleasing result.

These little pies are ideal for fall parties or a kid-friendly baking activity. They’re less messy than slicing and serving a whole pie, and they’re also easy to vary — swap the apple filling for pear, peach, pumpkin, or another favorite fruit.

For convenience I used store-bought pie crusts, but feel free to use homemade crust if you prefer. Serve the pies warm with a drizzle of caramel and a spoonful of whipped cream for an indulgent finish.

Common questions about making hand pies

What is a hand pie?

A hand pie is an individual-sized pie made by sandwiching a filling between two pieces of pastry. The edges are sealed, often crimped with a fork, and the pies are baked until golden.

Can I freeze hand pies?

Yes. Freeze hand pies either before or after baking. To freeze unbaked pies, arrange them flat in a freezer-safe container or bag; thaw before baking and follow the recipe’s baking time. For baked pies, cool completely, store in a freezer-safe container, and reheat in the oven before serving.

What are the best apples for apple pie?

Granny Smith is a popular choice for pie because it holds its shape and provides a bright, tart contrast to the sugar and spice. Other good options include Jonagold, Honeycrisp, Braeburn, and Golden Delicious.

What are the ingredients for apple pie?

At its core an apple pie filling includes apples, spices (such as cinnamon or apple pie spice), sugar, and a thickening agent like cornstarch. The filling is enclosed in pie crusts for baking.

Ingredients

  • 2 pie crusts
  • 2 medium apples
  • 3/4 cup water
  • 1 tablespoon cornstarch
  • 1/2 cup brown sugar
  • 1 teaspoon apple pie spice
  • Egg wash
  • Sugar, for sprinkling

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a small bowl, whisk the water and cornstarch until smooth. In a medium saucepan over medium-high heat, combine the cornstarch mixture with brown sugar and apple pie spice. Stir until the sauce thickens, then add the diced apples. Reduce heat and cook 10–12 minutes, stirring occasionally, until the apples are tender. img 4111 18
  3. While the filling cooks, roll out the pie crusts. Using a 3-inch round cutter or a cup, cut out circles. Re-roll scraps as needed to cut six bottom crusts and six tops. img 4111 20
  4. Place six bottom crusts on the prepared baking sheet. Spoon about 1 tablespoon of apple filling into the center of each. Top with the remaining crusts, cut a small “x” or vent in each top, then press or crimp the edges with a fork to seal. img 4111 22
