Ingredients

Escabeche (pickled veggies)

  • 1 1/2–2 teaspoons salt
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • 1/2 cup apple cider vinegar
  • 1 cup sliced carrot
  • 1 cup sliced cauliflower
  • 1 cup sliced yellow onion, crescent-shaped
  • 2/3 cup sliced fresh jalapeños
  • 4 cloves peeled garlic
  • 12 ounces boiling water

Bloody Mary

  • 12 ounces chipotle Bloody Mary mix
  • 8 ounces vodka
  • 2 tablespoons fresh lime juice
  • 1 tablespoon pickle juice from escabeche
  • 1 teaspoon minced fresh cilantro
  • 1 teaspoon hot sauce, optional
  • Ice cubes

Garnish

  • 4 strips of your favorite vegan bacon
  • 1 tablespoon coarse salt, for rim
  • Green olives, optional
  • 4 long sprigs of cilantro

Instructions

  1. For the escabeche: In a 32-ounce glass jar, combine salt, sugar, oregano and bay leaves, then add the apple cider vinegar and stir. In a large bowl, toss the carrots, cauliflower, onion, jalapeño and garlic to mix evenly.
  2. Transfer the vegetables to the jar and carefully pour in the boiling water. Screw on the lid and shake until the salt and sugar dissolve and the seasonings are well distributed.
  3. Refrigerate the jar for at least one day so the vegetables can marinate and soften slightly. The longer they sit, the more developed the flavor will be.
  4. For the Bloody Mary: In a cocktail shaker or pitcher, combine the chipotle Bloody Mary mix, vodka, lime juice, escabeche pickle juice and optional hot sauce. Stir or shake to blend, then set aside while you prepare the garnishes.
  5. Prepare the vegan bacon according to package instructions—typically pan-frying with a teaspoon of oil for a few minutes per side—then cut each strip into three pieces.
  6. Place the coarse salt in a shallow bowl. Moisten the rim of four highball or 8–10 ounce glasses and dip each rim into the salt to coat. Fill the glasses with ice.
  7. Pour the Bloody Mary mixture into each glass. Garnish with a sprig of cilantro and thread layers of escabeche, vegan bacon and olives on long toothpicks or skewers. Place the loaded skewer across the glass and serve immediately.

Notes

This recipe yields more escabeche than necessary for four drinks, which is intentional — extra pickled veggies are great to keep in the fridge for topping other dishes or making more cocktails later.
