Ingredients

Garlic Butter

  • 1 garlic bulb
  • 1 teaspoon olive oil
  • ½ cup high-quality salted butter, room temperature
  • Freshly ground black pepper
  • 1 tablespoon fresh herbs, chopped (parsley, basil, rosemary, oregano, or chives)
  • 1 teaspoon lemon zest (optional)

Chicken

  • 2 chicken breasts (about 1.5 lbs)
  • 2 teaspoons Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon cooking oil (avocado, sunflower, or grapeseed)
  • lemon juice (optional)

Instructions

Garlic Butter

  • Prepare oven: Preheat to 400°F. Tear a square of foil large enough to wrap a whole garlic bulb.
  • Prepare garlic: Trim the top of the garlic bulb to expose the cloves, drizzle with olive oil, and wrap tightly in foil.
  • Roast: Place the wrapped garlic on a baking sheet and roast 40–45 minutes. Let cool, then squeeze or scoop out the roasted cloves.
  • Mix: Mash roasted garlic into room-temperature butter using a fork, mixer, or food processor. Stir in pepper, chopped herbs, and lemon zest if desired.

Chicken

  • Heat oven: Preheat to 400°F.
  • Pound chicken: Pound breasts to an even ½–¾ inch thickness.
  • Season: Pat chicken dry and rub with Italian seasoning, garlic powder, paprika, salt, and pepper.
  • Sear: Heat 1 tablespoon oil in a hot cast iron skillet over medium-high. Sear chicken on one side about 5 minutes until golden, flip, then transfer skillet to the oven and cook 10–13 minutes, or until internal temperature reaches 155°F (68°C).
  • Rest: Top each breast with a pat of garlic butter and a squeeze of lemon. Let rest 5 minutes before slicing and serving.
