This stir fry combines ground beef and vegetables in a sweetened soy-based sauce. Ground beef is budget-friendly and convenient, but you can substitute thinly sliced beef if you prefer.

It’s a go-to weeknight one-pot meal: simple to make yet full of flavor.

How to Make Korean Ground Beef Stir Fry

  • Whisk all sauce ingredients in a small bowl until smooth, then set aside.

  • Heat olive oil in a large skillet over medium-high heat. Add the ground beef and break it apart, then add diced onion.

  • Cook until the beef is lightly browned, about 5–7 minutes, breaking up any large pieces as it cooks.

  • Add minced garlic, bell peppers, broccoli, and carrots. Stir-fry for about 2 minutes.

Time Saving Tips

The full recipe takes about 30 minutes including prep. To speed things up:

  • Make the sauce ahead and refrigerate; whisk briefly before using.
  • Use pre-shredded or julienned carrots and packaged broccoli florets to cut prep time.
  • Combine the stir-fry vegetables in a container so everything is ready to toss into the pan.

Prep in advance and the dinner cooks up in roughly 15 minutes.

Recipe Notes

Types of Ground Beef

  • This was made with 90% lean ground beef without draining. When using 85% lean or lower, you may want to remove excess fat after browning the beef and before adding vegetables.
  • To remove fat without transferring the beef to another container: push the beef to one side, tip the pan slightly so fat pools, then carefully blot the fat with folded paper towels using tongs or a spatula to avoid burns.

Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground beef (90% lean recommended)
  • 1/2 cup yellow onion, finely diced
  • 2 tablespoons garlic, minced (about 5–6 cloves)
  • 1 cup red bell pepper, chopped
  • 1 cup carrots, julienned or shredded
  • 2 cups broccoli florets, cut smaller

Sauce:

  • 1/3 cup brown sugar
  • 1/3 cup reduced sodium soy sauce (use tamari for gluten-free)
  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon ground ginger (or 2 tablespoons fresh grated ginger)
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)

Garnish:

  • sliced green onions

Instructions

  1. Whisk all sauce ingredients together and set aside.
