Marie Callendar Corn Bread Recipe

  • 1 bag of Marie Callendar’s Original Corn Bread Muffin Mix. It’s my preferred mix, but you can substitute another brand if needed.
  • 2 cups shredded cheddar cheese (or your favorite cheese)
  • 1 tablespoon canned diced jalapeños (La Victoria recommended)

PRO TIP: Taste the canned jalapeños before adding. If they’re very spicy, chop them finely and use less to control the heat.

Step 1: In a large bowl, combine the Marie Callendar’s cornbread mix with 1 1/2 cups water. Stir in the 2 cups of shredded cheese and 1 tablespoon finely chopped canned jalapeños. Mix until the batter is smooth and lumps disappear.

Step 2: Line a muffin tin with paper liners. Using an ice cream scoop makes filling the cups easy—fill each liner about two-thirds full.

Step 3: Bake at 375°F for 25 minutes, until the muffins are golden brown and a toothpick inserted in the center comes out clean.

Cornbread FAQ

What goes with cornbread?

Cornbread pairs with a wide variety of dishes. Try it with BBQ ribs and baked beans for a cookout, or serve it alongside turkey chili, cheeseburger meatloaf, chicken noodle soup, grilled steaks, pulled pork sandwiches, pot roast, pork chops, or ham. A smear of honey butter makes it even better. Traditional combos also include roasted or fried chicken with mashed potatoes and coleslaw.

How do you make your own cornbread mix?

Combine equal parts cornmeal and flour with baking powder and salt to make a basic mix:
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt

To bake: use 2 cups of this mix with 1 cup buttermilk, 1 egg, and 4 tablespoons melted butter. Add 1/4 cup honey if you prefer sweet cornbread.
