  • Cream of chicken soup
  • Red enchilada sauce – mild or hot, to taste
  • Canned green chilis
  • Cheddar cheese – shredded sharp cheddar or a Mexican blend
  • Tortilla chips – about one 12 oz bag, broken into large pieces

How to Make Taco Casserole

  1. Preheat the oven to 350°F (175°C).

Ingredients

  • pounds ground beef
  • 1 medium onion, diced
  • 10½ ounces condensed cream of mushroom soup
  • 10½ ounces condensed cream of chicken soup
  • 10 ounces red enchilada sauce, mild
  • 4 ounces canned green chilis
  • 16 ounces sharp cheddar cheese, shredded
  • 12 ounces tortilla chips (about 1 bag)

Instructions

  1. Preheat the oven to 350°F.
  2. Brown the beef and onion in a large skillet over medium heat, then drain excess fat.
  3. Add both soups, enchilada sauce, and green chilis to the skillet and simmer for 5 minutes.
  4. Layer half the tortilla chips (in large pieces) across the bottom of the casserole dish.
