Do you change your meals during Lent? In parts of the country Friday fish frys are a beloved tradition, but you don’t need to wait for a fry to enjoy a terrific seafood dinner. These Shrimp Parmesan Sandwiches were a hit at my table — even the baby enjoyed a deconstructed version.

Family-friendly and easy to assemble, these sandwiches combine spaghetti with marinara, popcorn shrimp and two kinds of cheese tucked into crusty garlic bread. They’re ideal for a quick meatless Friday or any time you want a fun, portable twist on comfort food.

If you love Chicken Parmesan, you’ll recognize the flavors here. Instead of a breaded chicken cutlet, this sandwich uses popcorn shrimp, and instead of separate sides, the spaghetti and garlic bread become the sandwich base. The result is an easy, hand-held version of a familiar favorite.

Shrimp is often a good first seafood for kids; its familiar texture and flavor make it more approachable than some other options. I compare popcorn shrimp to chicken nuggets when introducing it to little ones, and they usually take to it right away. If you’re trying new foods with picky eaters, a gentle “one bite” rule can help: require one bite, and if they don’t like it now, they can try it again later.

Want to save time? Cook extra pasta earlier in the week and refrigerate it for these sandwiches. Reusing leftovers makes Friday dinner effortless and delicious.
