Ingredients for Walking Taco Casserole

- 1 cup onions, chopped
- 3 cloves garlic, sliced
- 2 lbs lean ground beef
- 1 250ml can green chiles
- 2 packets taco seasoning
- Black pepper to taste
- 3 cups sharp cheddar, shredded (2 cups for baking and 1 cup for topping)
- 3 cups Fritos corn chips
- 2 cups shredded iceberg lettuce
- 1 cup tomatoes, diced
- 1 cup salsa
- 1 cup sour cream
- 1/2 cup sliced green onions (for topping)
- 2 jalapeño peppers, optional
Step by Step Instructions

STEP ONE – Heat 1 tablespoon oil in a large skillet over medium. Add the chopped onions and sliced garlic and sauté for about two minutes, stirring often, until softened.
STEP TWO – Add the ground beef and cook, stirring occasionally, until no longer pink. Drain excess fat if needed.

STEP THREE – Stir in the canned green chiles.
STEP FOUR – Add the two packets of taco seasoning with the amount of water called for on the seasoning package and cook according to those directions so the flavors meld.

STEP FIVE – Transfer the beef mixture to a 13×9-inch baking dish (or an oven-safe skillet). Evenly sprinkle 2 cups of shredded cheddar over the top.
STEP SIX – Bake in a 350°F (175°C) oven for about 15 minutes, until heated through and the cheese is melted and bubbly.
STEP SEVEN – Remove from the oven and immediately top with crushed Fritos, shredded lettuce, diced tomatoes, salsa, sour cream, sliced green onions and jalapeños if desired. Serve warm.

Storage and Make-Ahead Directions
You can prepare the seasoned beef mixture ahead of time: cool it completely and refrigerate for up to two days. Do not add the baking cheese or the Fritos until you are ready to bake and serve.
Store leftover cooked casserole in an airtight container in the refrigerator for up to two days.
Reheat individual portions in the microwave for one to two minutes or warm in a 350°F oven until heated through.
