Ingredients
- 2 pie crusts
- 2 medium apples
- 3/4 cup water
- 1 tablespoon cornstarch
- 1/2 cup brown sugar
- 1 teaspoon apple pie spice
- Egg wash
- Sugar, for sprinkling
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
- In a small bowl, whisk the water and cornstarch until smooth. In a medium saucepan over medium-high heat, combine the cornstarch mixture with brown sugar and apple pie spice. Stir until the sauce thickens, then add the diced apples. Reduce heat and cook 10–12 minutes, stirring occasionally, until the apples are tender.

- While the filling cooks, roll out the pie crusts. Using a 3-inch round cutter or a cup, cut out circles. Re-roll scraps as needed to cut six bottom crusts and six tops.

- Place six bottom crusts on the prepared baking sheet. Spoon about 1 tablespoon of apple filling into the center of each. Top with the remaining crusts, cut a small “x” or vent in each top, then press or crimp the edges with a fork to seal.
