For me, a nicely composed beverage at the end of the day feels like a small celebration. Traditional mocktails too often lean sweet and fizzy, more like soda than a cocktail. What I want is a drink with balance—something tart, complex and easy to sip.

Recently I tried an Italian Spritz mocktail at a restaurant that the server said tasted nearly identical to an Aperol Spritz. Skeptical at first, I was pleasantly surprised: the mocktail captured the same bright bitterness, herbal notes and effervescence of the original.

A premium non-alcoholic aperitif concentrate that mimics the bitter orange, rhubarb and herb profile of Aperol. You only need a small amount to flavor the drink, so a bottle lasts a while.

Choose any good-quality non-alcoholic sparkling white wine or secco with lively bubbles. A crisp, dry option works best to mimic prosecco’s effervescence and to balance the bitter-sweet aperitif.

Fresh-squeezed lime juice adds bright acidity and lifts the herbal flavors. A thin lime wheel on the rim makes a simple, attractive garnish.

Simple Syrup

A small amount of simple syrup softens the tartness without making the drink syrupy sweet. Homemade simple syrup is easy: combine equal parts sugar and water, heat while stirring until the sugar dissolves, then cool. Store refrigerated up to a month.

The recipe is straightforward and fast to prepare. Use a tall glass and plenty of ice for the best presentation and chilling.

Fill a 16-ounce glass halfway with ice. Add the Lyre’s Italian Spritz, fresh lime juice and simple syrup, then stir gently to combine. Top the glass with chilled non-alcoholic sparkling wine until it reaches the rim. Garnish with a lime slice and serve immediately.

This mocktail is tart, slightly bitter and effervescent—an excellent grown-up alternative for warm-weather sipping.

  • 2 oz Lyre’s Italian Spritz (bitter orange style)
  • 1.5 tsp fresh lime juice
  • 2 tsp simple syrup (see instructions above)
  • 8 oz chilled non-alcoholic sparkling white wine (secco or dry prosecco-style)
  • Lime slice for garnish (optional)

Instructions

  1. Fill a 16 oz glass halfway with ice. Add 2 oz Lyre’s Italian Spritz, 1.5 tsp fresh lime juice and 2 tsp simple syrup. Stir gently to combine.
  2. Top the glass with 8 oz chilled non-alcoholic sparkling wine, filling to the rim. Garnish with a lime slice if desired and enjoy immediately.
