Ingredients
- Matty’s Greek Style Garlic Lemon Chicken
- 1 1/2 to 2 Pounds Chicken legs and thighs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp crushed mint
- 1/2 tsp oregano
- 3/4 cup chicken broth
- Juice of 1 lemon (about 1/4 cup)
- 1 Tablespoon low sodium soy sauce
- 2 Tablespoons olive oil
- 3 cloves minced garlic
- Small bunch cilantro
- 1 medium onion, sliced into 1/2 inch rings
Instructions

Select Sauté on the Instant Pot and set it to High.

Coat the chicken with the dry spices (salt, pepper, garlic powder, onion powder, crushed mint, oregano). When the Instant Pot displays “Hot”, add olive oil. Brown the chicken about 4 minutes per side without crowding the pot. You will likely need two batches.

Remove browned chicken and set aside. Add the minced garlic to the pot and sauté briefly until fragrant. Pour in the chicken broth, lemon juice and soy sauce to deglaze, scraping the bottom to lift browned bits.

Press Cancel to stop the Sauté function.

Return the browned chicken to the pot. Add the cilantro to the liquid and place the sliced onion rings on top of the chicken.

Place the lid on the Instant Pot and set the valve to Sealing. Press the Poultry button and set the time to 10 minutes at high pressure.

While the chicken cooks, preheat your broiler to high and place a rack in the middle position. When the cook cycle completes, perform a quick release. Remove the chicken and transfer to a foil-lined baking sheet. Broil about 3 minutes per side until nicely browned. Meanwhile, cancel any remaining functions on the Instant Pot and set Sauté to High to reduce the sauce for 6–10 minutes until slightly thickened. Serve the chicken topped with the reduced sauce. Enjoy.
