Aim for an internal temperature of 160°F when cooking the breast, checked with an instant‑read meat thermometer. After cooking, let the breast rest before slicing so the juices redistribute; resting on a cutting board with a shallow moat to catch juices is ideal. During the rest the internal temperature will rise to 165°F, which is the safe temperature for cooked poultry.

All timing guidance below is based on a 6–7 pound breast; adjust times for smaller or larger pieces accordingly.

  1. Preheat the oven to 450°F. Rinse and pat the breast dry. Oil a roasting pan or set a rack in the pan.
  2. Place the seasoned breast in the pan and roast for 30 minutes. Reduce the heat to 350°F and roast for about 1 hour 15 minutes more, until the skin is browned and the internal temperature reaches 160°F.

You can baste with broth or pan juices during cooking for extra flavor, but avoid basting during the final 30 minutes to help the skin crisp.

Slow Cooker Turkey Breast

The slow cooker delivers reliably tender, moist meat and frees up the oven, though it won’t produce crisp skin unless you finish it under the broiler.

  • Add liquid to the slow cooker — for example, 1/4 cup white wine and 1/2 cup chicken broth. Placing sliced carrots, celery, onions, and garlic on the bottom enhances the cooking liquid for a more flavorful gravy.
  • Set the breast on top, cover, and cook on low for about 6 hours, or until the internal temperature reaches 160°F. Timing will vary with your slow cooker and the breast size.
  • If you want browned, crispy skin, transfer the cooked breast to a baking pan and broil it skin side up for a few minutes, watching closely to avoid burning; rotate as needed for even browning.

The Instant Pot combines quick cooking with great texture. Use the Sauté function to brown the skin first, then pressure cook for tender meat.

  1. Use Sauté to brown the breast skin side down, tilting to brown evenly, about 2 minutes per side so the skin gets some color.
  2. Remove the breast, sauté onions and celery if desired, add about 3/4 cup broth, place a removable rack in the pot, and set the breast on the rack skin side up.
  3. Seal and pressure cook on High for 25 minutes. Let pressure release naturally for 10 minutes, then quick release remaining pressure. Check the center with a thermometer — it should read 160°F.

For crisper skin, finish the breast briefly under the broiler after pressure cooking.

How to Make Easy Turkey Gravy

You can make a simple, tasty gravy from the pan drippings no matter which cooking method you choose.

  1. Strain the pan juices into a measuring cup, discarding solids.
  2. Melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook until golden, about 1–2 minutes.
  3. Gradually whisk in the strained drippings, then add broth until you have about 2 cups of liquid total (1–2 cups depending on how much drippings you have).
  4. Bring to a boil, whisking frequently until the gravy thickens, 6–8 minutes. Taste and season with salt and pepper as needed.
