If you haven’t tried cookies for breakfast, you’re missing out.
Before you picture a tray of sugary snickerdoodles, know these cookies are built with nutritious ingredients: whole-grain oats, mashed potatoes, dried fruit, and seeds. The mashed potato adds moisture and subtle creaminess, making these a surprisingly satisfying, portable breakfast that also works great as a post-workout snack.

Yes—actual potatoes. This humble ingredient brings texture and structure without needing eggs or dairy, so the cookies stay vegan and allergy-friendly while delivering complex carbs and potassium to help fuel your day.

These cookies are great for busy mornings, post-workout refueling, or a quick grab-and-go snack. I like to freeze a batch and microwave a couple for a few seconds—it’s like reheating freshly baked cookies each time.

Why you’ll love these Potato Breakfast Cookies
- Allergen-friendly. These cookies avoid common allergens like nuts, dairy, and eggs, and can be made gluten-free using certified oats.
- Potato-powered. Mashed potatoes add moisture and nutrients—carbohydrates and potassium—to help refuel muscles after exercise or keep you energized through a busy morning. I recommend two cookies per serving for a balanced bite. I used leftover mashed potatoes (unsalted and plain) for best results.
- Vegan. The recipe is fully plant-based, so you can enjoy the dough safely and skip raw-egg concerns.
