A few months ago I found a great deal at Bed Bath & Beyond on a BabyCakes Mini Donut Maker for $7, so I bought it and started making a special weekend treat for Rick and me.
The first batch came from a slightly tweaked version of the “Muffin in a Bowl” recipe on page 258 of the Trim Healthy Mama book.

| Cinnamon Spice with Cream Cheese Frosting |
I can enjoy about six of these and still stay on plan, which makes me one happy mom and grandma. Rick loves them and says you can’t even tell they’re “diet food.”
Here’s the recipe for the
Cinnamon Spice Donuts
Printable Recipe
Ingredients:
- 1 large egg
- 1 tbsp psyllium husk powder (or oat fiber)
- 1 tbsp almond flour
- 1 tbsp Pyure organic stevia (or your preferred sweetener)
- 1 tbsp golden flax meal
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp ground ginger
Directions:
1. Beat the egg with a splash of vanilla and the sweetener.
2. Add the psyllium husk powder (or oat fiber), almond flour, flax meal, and baking powder. Mix until combined.
3. Spoon the batter into the donut maker cavities and close the lid. Remove when the ready light indicates they are done.
4. Glaze or frost with your favorite frosting.
Cream Cheese Frosting (optional)

Ingredients:
- 1 oz softened cream cheese (I use reduced-fat or Greek yogurt cheese)
- 1 tbsp softened butter
- 1 tbsp powdered sweetener
Directions: Place all ingredients in a shallow bowl and beat until fluffy. Spread over cooled donuts.
If you use a different sweetener than I do, consult a conversion chart to match sweetness levels.
