  • 1 tablespoon olive oil
  • 1 green pepper, sliced thin and diced
  • 1 onion, sliced thin and diced
  • ¾ lb roast beef, sliced thin from the deli
  • 1 tablespoon Worcestershire sauce
  • 4 slices provolone cheese, cut into small squares
  • Salt and pepper, to taste (about ¼ teaspoon each)
  • 1 sheet (17.3 ounce package) frozen puff pastry, defrosted

Instructions

Defrost Pastry Dough and Prep Filling

  1. Remove one sheet of puff pastry from the package and allow to defrost at room temperature for about 40 minutes. While it thaws, slice and dice the green pepper, onion, and cheese. Keep the cheese at room temperature.
  2. Heat olive oil in a skillet over medium-high heat until shimmering. Add the diced green pepper and onion and sauté until softened. Remove the veggies and set aside.
  3. Slice the roast beef into thin strips, then add to the skillet. Sprinkle Worcestershire sauce over the beef, toss, and cook for about a minute until heated and slightly browned. Season with salt and pepper to taste.
  4. Preheat oven to 400°F once the puff pastry is defrosted.

Assemble and Bake

  1. Cut the puff pastry into two-inch squares with kitchen scissors. Press each square into a mini muffin cup to form a little pastry cup.
  2. Place several strips of beef (about 1 tablespoon) into the bottom of each pastry-lined cup. Top each with about two teaspoons of the sautéed peppers and onions.
