High Protein Smash Burger Tacos (Meal Prep)
These high-protein smash burger tacos are crispy, cheesy and topped with fresh ingredients. Each mini tortilla is pan-seared with a thin layer of seasoned beef, melted cheese, shredded lettuce, diced onion, pickles and a creamy high-protein burger sauce. They’re quick to make, ideal for weekly meal prep, and—when stored correctly—reheat without getting soggy.

Ingredients
Beef Smash
- 900g (1.9lb) Lean Beef Mince
- 2 tsp (8g) Onion Powder
- 2 tsp (8g) Garlic Powder
- 1 tsp (4g) Smoked Paprika
- 10 Mini Flour Tortillas
- 10 Light Cheese Slices
- Salt & Pepper, to taste
Toppings
- 120g (4.2oz) Lettuce, shredded
- 1 White or Brown Onion, diced
- 2 Dill Pickles, diced
High-Protein Burger Sauce
- 150g (5.3oz) High protein yogurt
- 2 Tbsp (40g) Light mayonnaise
- 1 Tbsp (20g) Tomato ketchup
- 2 tsp (20g) Yellow (American) mustard
- 1 tsp (5ml) Pickle juice
- 1 tsp (4g) Garlic powder
- 1 tsp (4g) Smoked paprika
- Salt & Pepper, to taste
Instructions
Make the Sauce
- Whisk all sauce ingredients in a bowl until smooth. Transfer to a bottle or container and refrigerate until serving.
Season the Beef
- In a large bowl combine the mince with garlic powder, onion powder and smoked paprika. Season with salt and pepper and mix gently—do not overwork.
Lay Out Tortillas
- Arrange all 10 tortillas on a clean surface.
Portion & Spread Beef
- Divide the mince into 10 equal portions. Place one portion on each tortilla and spread it thinly to the edges so the beef covers the tortilla. A small lip is fine.
Cook
- Heat a large non-stick or cast-iron pan over medium-high. Lightly oil the pan and place the assembled tacos beef-side down. Cook 2–3 minutes until the beef browns and the edges crisp and adhere to the tortilla.
Flip & Add Cheese
- Flip so the tortilla contacts the pan. Immediately place one slice of light cheese on each taco and cook about 1 minute until the cheese melts and the tortilla is lightly golden. Remove and continue with the rest.
Build the Tacos
- Top each taco with shredded lettuce, diced onion, diced pickles and the high-protein burger sauce. Serve immediately for maximum crispness.

Storage Instructions
Store cooked tacos separately from fresh toppings to preserve crunch. Place tortillas with cooked beef and melted cheese in an airtight container and refrigerate for up to 4 days, or freeze for up to 3 months. Keep lettuce, onions, pickles and sauce in separate containers and add them fresh after reheating.
Reheating Instructions
Reheat the tacos by one of these methods:
- Pan: 1–2 minutes over medium heat to restore crispiness.
- Air Fryer: 2–3 minutes at 180°C (350°F) until hot and crispy.
- Oven: 5–7 minutes at 180°C (350°F).
- Microwave (last resort): 30–45 seconds; they will be less crisp.
Add fresh toppings and sauce after reheating for the best texture.
